Prep & Stock Stone Mix-ins


Prepping & Stocking IQF Fruit


1.
Fill Cambro®


Fill ⅙ size Cambro with appropriate amount of IQF fruit
(fill level varies based on expected usage, e.g., ¼, ½ or ¾ full).


2.
Cover and date


Cover Cambro with plastic wrap. Place Cambro lid on top. Use grease pencil to write expiration date on Cambro. IQF fruit has a shelf life of 4 days (1 day to thaw and 3-day shelf life).


3.
Refrigerate and FIFO


Place newly prepped IQF fruit in reach-in refrigerator behind/ under older product to ensure oldest product is used first (FIFO).

Prepping & Stocking RTE Cookie Dough

  1. Fill Cambro


Using gloves, remove required amount of ready-to-eat cookie
dough from walk-in freezer. Fill ⅙ size Cambro no more than
halfway with cookie dough.
  1. Cover and date


Cover Cambro with plastic wrap. Place Cambro lid on top. Use
grease pencil to write expiration date on Cambro. Cookie dough has a shelf life of 3 days.
  1. Refrigerated and FIFO


Place prepped cookie dough in reach-in refrigerator behind/
under older product to ensure oldest product is used first (FIFO).

Prepping & Stocking Pie Fillings

  1. Fill Cambro


Open a can of pie filling and transfer it to ⅙ size Cambro.
  1. Cover and date


Cover Cambro with plastic wrap. Place Cambro lid on top. Use
grease pencil to write expiration date on Cambro. Pie filling has a shelf life of 10 days.

Prepping & Stocking Yellow Cake

  1. Prep


Remove yellow cake from walk-in freezer. Using a scraper, cut
squares no smaller than ½" and no larger than ¾". See How to Prep Cake for Mix-ins Procedure Card.
  1. Fill Cambro


Place cut cake pieces into ⅙ size Cambro.
  1. Refrigerate and FIFO


Place newly prepped pie fillings in reach-in refrigerator behind/
under older product to ensure oldest product is used first (FIFO).


Prepping & Stocking Pineapple

  1. Cover and date


Cover Cambro with plastic wrap. Place Cambro lid on top. Use
grease pencil to write expiration date on Cambro. Yellow cake has a shelf life of 5 days.
  1. Refrigerate and FIFO


Place newly prepped yellow cake in reach-in refrigerator behind/

After opening the can
of pineapple, place it in ⅙ size Cambro.
  1. Cover and date


Cover Cambro with
plastic wrap. Place Cambro lid on top. Use grease pencil to write expiration date on Cambro. Pineapple has a shelf life of 3 days.
  1. Refrigerate and FIFO


Place newly prepared
pineapple in reach-in refrigerator behind/ under older product to ensure oldest product is used first (FIFO).

Prepping & Stocking Other Stone Mix-ins


Peanut Butter / Marshmallows

    1. Fill 2 clean and sanitized black crocks with mix-in ¾ full.

    2. Cover with lid, placing one on each stone.

Rotating Peanut Butter / Marshmallows
Combine black crock from primary stone and black crock from secondary stone, by placing primary on top of secondary.
Fudge and Caramel Bottles

    Clean and sanitize FIFO bottle.

  2. Unscrew bottom cap and fill with Fudge or Caramel. Refer

to weekly cleaning checklist to ensure food safety precautions.
Bananas

  1. With banana on clean and sanitized cutting board, use a paring knife to slice off top end of banana.

  2. Gently score banana skin at half and quarter marks. Only very shallow cuts are necessary since skin bruises easily.

  3. Cut along score lines according to mix-in portion for size ordered.
