The master's thesis's subject's rationale and relevance. In particular for the countries of Central Asia, especially Uzbekistan, the issue of satisfying the industry's requirement for raw materials and the population's need for food items is of utmost importance. So, in order to properly feed the population, agriculture must be developed, an ideal artificial irrigation system must be established, and on this foundation, soil fertility and agricultural crops must be increased. Everyone is focused on the issue of boosting production through yield enhancement rather than land area expansion.

Our nation's favorable natural and climatic conditions offer potential for this type of crop to produce a high yield. Wheat bread is consumed by more than half of the world's population. Wheat flour is used to make high-quality bread because wheat grains are rich in protein and carbohydrates, which are mostly found in gluten. Wheat bread is widely regarded for its flavor, nutritional benefits, and ease of digestion. Protein content in wheat grains ranges from 11.0% to 24.0%, depending on the variety and planting conditions, while protein in wheat bread is 95.0% digestible. Additionally, wheat is used to make groats and its flour is consumed.
