PHYSICOCHEMICAL INDICATORS OF HONEY OF THE EAST KAZAKHSTAN REGION

Seifullin Kazakh Agro Technical University (Nur-Sultan), Kazakhstan Abstract. The results of a study on assessing the quality of honey samples from the East Kazakhstan region are presented. Organoleptic properties were determined: color, taste and aroma of three types of honey (mountain herbs, buckwheat and sunflower). A study of the physicochemical indicators of honey was carried out: the mass fraction of water, reducing sugars and sucrose, diastase number, total acidity and the content of oxymethylfurfural. The data obtained show that the mass fraction of water for all types of honey is quite low (15.0-17.3 %), which characterizes its maturity and determines its suitability for long-term storage. Honey samples are high in reducing sugars, they account for 83.3‒87.9 % of honey dry matter, which indicates their maturity and nutritional value. The mass fraction of sucrose in the studied honey samples varied from 2.5 to 4.5 %. The values of the diastase number of all types of honey (in the range of 13.1-15.1), as well as a negative qualitative reaction to the presence of oxymethylfurfural, confirms that the studied honey samples were not heated and were stored in compliance with storage conditions. Taking into account that the water activity is important for the control of the safety and quality of honey, we have carried out a determination of the water activity for the studied types of honey. The data obtained show that all types of honey in terms of water activity (0.4010; 0.4400; 0.5400) belong to products with low moisture content, respectively, they are safe products protected from microbiological spoilage. As a result of the research, it was established that the samples of honey from the East Kazakhstan region are natural high-quality products that meet regulatory requirements.
