UZBEK TRADITIONAL MEALS
There are four meals a day at an Uzbek home: breakfast, dinner, tea and supper. Breakfast is the first meal of the day. It is at about 7 o’clock in the morning, and consists of porridge with milk and salt or sugar, boiled or fried eggs, and bread and butter with marmalade or jam. Some people like to drink tea, but others prefer coffee. Instead of porridge they may have mastava or pancakes.
The usual time for dinner is 12 o’clock. This meal starts with soup and salad. This is followed by some meat or chicken with fried or mashed potatoes. Desert is often next. Some people prefer to have national meals: palov, chuchvara, hunon, shashlik and so on. Uzbek people often drink green tea with dinner. In hot summer Uzbek people prefer juice or cherry compote.
Tea is the third meal of the day. It is between 4 and 5 o’clock. There is green or black tea, sugar, bread and kaymak, cakes and somsa on the table.
Supper is the last meal of the day. The usual time for supper is about 7 o’clock, and all the members of the family sit down together. Supper usually consists of soup, shavla, ugra, dimlama and other dishes. When guests and visitors are invited for supper Uzbek women try to cook holiday dishes: kazan-kebab, dolma, manti with shakarob and olivye. Then, after a long traditional conversation, they have a lot of sweets with fruits and melons.
This is the order of meals among many Uzbek families, but many young people – students or office clerks in cities and towns - have lunch in the middle of the day instead of dinner. They have hamburger or hot-dog with coffee or coca-cola.
