3. 1. 1. Geometric characteristics of melon fruits, the mass of the constituent parts of the fruit
A great importance for determining the finished melon products is the ratio of the fruit parts: flesh, crust, seeds and placenta. To determine this indicator, were used fruits with previously measured linear dimensions. Fruits were cut into slices and peel the crust 5-10 mm thick, depending on the variety. The same-name constituents of fruits of the same variety were combined and weighed on an electronic balance with an accuracy of 1 gram. The data obtained are shown in Tables 1, 2.
