Abstract 
"Fundamentals of Food Technology" serves as a basis for mastering the 
specialty subjects of students in their specialties, and also for undergraduate 
students to study the subject.
"Fundamentals of Food Technology" is an introduction to the general 
questions and theoretical foundations of raw materials used in various branches of 
the food industry, produced food products and waste, as well as technological 
processes used in various branches of the industry, fats and oils, grain, covering the 
teaching of the basic schemes of production of bread and confectionery products, 
meat, milk and canned products, winemaking and cooking products. 
The subject "Fundamentals of food technology" is considered a course 
included in the block of general professional subjects and should be taught in 3 
courses. In order to implement this program, students must learn from the general 
professional subjects planned in the curriculum, and in addition, during the 
teaching period of this subject, students should gain an understanding of the 
technological processes in the industrial enterprises of their field and practical 
work in the laboratory, based on the results of familiarization practice. must have

receiving raw materials in food production enterprises and the technology of the
