INDIAN SPICES

  • "Masala" is the Hindi word for "spice". When a combination of spices, herbs and other condiments are ground together, it is also called "masala".
  • Water, vinegar, yogurt or other liquids are sometimes added to the ground spices. This wet mixture is called "wet masala" and is used as a marinade or sautéed in oil before adding the main vegetable or meat so that the delicate flavours of the spices are released in the recipe.

POPULAR DISHES

  • Basmati rice is an authentic long grained white rice, which has unique nutty flavour. Basmati rice is very popular in India and in European countries.
  • Tikka: Skewered boneless meat cubes cooked in a tandoor
  • Naan: Indian flat bread made from wheat and baked in a tandoor.
  • Korma: Rich sauce thickened with yogurt, nuts or poppy seeds. 

COOKING UTENSILS

  • Tandoor: The traditional Indian clay oven is called the "Tandoor". A Tandoor is a clay pot usually sunken neck deep in the ground. Charcoal is put on the flat bottom of the pot. The heat generated by the hot charcoal in and on the sides of the clay pot is used for cooking.

UTENSILS

  • It is probably the most versatile kitchen equipment in the Indian kitchen. Barbecues, breads, daal, gravies made in them acquire a unique taste, very different from the food cooked on the regular kitchen oven.

  • In India, teas are defined by the regions in which they are grown.
  • Chai" is the hindi word for Tea. Indian tea is full bodied and strong. Known throughout the world and adored by millions. Today Indian teas come in a wide range of flavours and strengths.
  • To be invited for a cup of tea, to an Indian house, means that not only will you get a cup of tea, but you will be served a plethora of yummy snacks. Indians are well known for their hospitality.
