3. 1. Physico-mechanical and chemical characteristics of melon fruit
Characteristics of the main types of melon sold in the Almaty region, indicating the varietal belonging to the use for processing are detailed in the intermediate report 2015 [6].

3. 1. 1. Geometric characteristics of melon fruits, the mass of the constituent parts of the fruit
A great importance for determining the finished melon products is the ratio of the fruit parts: flesh, crust, seeds and placenta. To determine this indicator, were used fruits with previ­ously measured linear dimensions. Fruits were cut into slices and peel the crust 5-10 mm thick, depending on the variety. The same-name constituents of fruits of the same variety were combined and weighed on an electronic balance with an accuracy of 1 gram. The data obtained are shown in Tables 1, 2.
