2.7. Assortments of bakery products and flour pastry production 
technology 
The bread production industry is one of the most important and developed 
sectors of the food industry. Year by year, the demand for bakery products is 
increasing and their assortment is increasing. 
There was no manufacturing industry in the territory of Uzbekistan until 
1929, everywhere the local people covered bread in ovens with their cocktails and 
consumed them. The 1st bread enterprise of our republic was built in 1929 in the 
city of Tashkent. In 1930, the 2nd one was built in Samarkand and the 3rd one was 
built in Tashkent. By 1980, the bread production industry with large and medium 
capacity is rapidly developing in the major cities of our Republic. Main and 
additional raw materials will be delivered to bread production enterprises in bulk in 
special capacities. New technological processes are used, belt ovens, dough 
preparation units, dough folding machines and other technological equipment are 
installed. Bread products are baked in gas and electric ovens. The container 
method is used for bread transportation. The development of techniques and 
technologies reduces the labor cost, in 1986 bread production enterprises were 
transferred from the Ministry of Food of the Republic to the Ministry of Cereal 
Products. 
Production of bread, buns, macaroni, and confectionery products begins in the 
enterprises of the bread production industry. After our republic gained 
independence, our bread industry developed rapidly. Small enterprises with 
modern continuous technological lines were built instead of large-capacity old-type 
bread production enterprises. The advantage of small bread production enterprises 
is that 20-30 types of bread rolls are delivered hot to the table of the population at 
the same time. The range of products of the bread production industry includes 
bread of various types and types, bread, biscuits, healthy and dietary national bread 
products. These listed products have hundreds of names and differ from each other 
in their variety, shape and cooking methods. Bread products are made from 
different types of rye and wheat flour. Bread products include products weighing 
0.5 kg and more. The bread is baked in special molds and on the sheets of the 
oven. Their recipe is simple and includes flour, water, salt and yeast. Small 
amounts of sugar, fat, malt, molasses and flavorings are added to some types of 
bread. Bulk products include products weighing 0.05-0.5 kg. In addition to the
