Tisno 42, 20355 Opuzen, Hrvatska 3 Sveučilište u Zagrebu, Prehrambeno-biotehnološki fakultet, Perottijeva 6, 10000 Zagreb, Hrvatska 4 Visoko gospodarsko učilište u Križevcima, Milislava Demerca 1, 48260 Križevci, Hrvatska (e-mail: ssrecec@vguk.hr) Sažetak U ovom radu obrađuje se osobitosti poljoprivredno-prehrambenog lanca i rizici od prehrambenih incidenata uzrokovanih djelovanjem bioloških, kemijskih i fizikalnih čimbenika u proizvodnji hrane. Posebno se obrađuje veza između pojedenih sustava upravljanja kvalitetom i sigurnošću u poljoprivredno-prehrambenom proizvodnom lancu i njihov utjecaj na vanjske i unutarnje atribute hrane. S aspekta poljoprivredne proizvodnje posebno se obrađuje učinak GGAP (Global Good Agricultural Practice, Globalna dobra poljoprivredna praksa) sustava, koji se od 2006. godine implementira u Republici Hrvatskoj. Implementacija GGAP sustava najviše se odražava na bolju usklađenost s propisima i na organizacijsku efikasnost. Učinak na poboljšanje komunikacije, povećanje prihoda i povećanje prodaje je osrednji. Očekivanja proizvođača koji planiraju skupnu certifikaciju svoje proizvodnje po GGAP sustavu koju objedinjuje njihova zadruga podudaraju se s percepcijama zaposlenika i menadžmenta dviju organizacija koje su implementirale GGAP sustav. Ključne riječi: poljoprivredno-prehrambeni proizvodni lanac, upravljanje rizicima, sljedivost, prehrambeni incidenti, sigurnost hrane Food safety and quality management in agro-food production chain – situation in Croatia Abstract This paper deals with characteristics of agro-food production chain and risks of food incidents caused by biological, chemical and physical hazards in food production and linkage between different quality systems management in agro-food production chain. Considering agricultural production GGAP (Global Good Agricultural Practice) is most suitable quality and risk management system, whose implementation started in Croatian agriculture since 2006. In a short time implementation of GGAP caused many positive effects, such as: better compliance with international regulations and better efficiency of organization. However, effects of GGAP implementation on improvement of communication, increasing of sale and incomes are moderate. Expectations of farmers who are planning their activities in implementation and certification of GGAP completely correspond with perception of employees and management in companies who already implemented and certified their organizations according to GGAP standards.
