on the topic: "Organization of effective technology for the production of flour from local wheat."
Relevance of the topic: According to the Strategy of Industrial and Innovative Development of the Republic of Uzbekistan, the economic independence of the state is determined by an increase in production efficiency, labor productivity, as well as the volume and quality of high-tech products, including grain and flour.
Such problems will be solved by improving the processes in the preparatory department of flour mills, since it will be possible to coordinate the technological characteristics of grain with a specific purpose in order to increase the efficiency of its use in the preparation of grain. Particular attention is paid to improving the process of whitewashing grain and its subsequent hydrothermal treatment.
One of the main problems is the need to increase the quantity and quality of flour by improving the surface treatment of grain in the grain cleaning shop of flour mills, rational use of local raw materials.
The fact that this work has improved the technological process justifies its relevance.

The study of this dissertation, to a certain extent, contributes to the implementation of the tasks set by the President in programs, decrees and resolutions of such events, as well as other regulatory legal acts related to this activity.
