Scientific and practical significance of research results.
The scientific significance of the research results is explained by the development of science-based solutions for pre-whitening the grain and processing it with cold water, considering the technological characteristics of the grain, improving its minimum energy consumption and baking advantages.
Practical significance of the research results An effective method of improving the functional properties of grain, preparation of milled local wheat grains in Uzbekistan for weighing on the basis of theoretical and experimental research on varieties;
based on the reduction of ash content by 0.3-0.4% in the preparation of local wheat grains for shredding and the reduction of II-threshing time by 1.5-2 hours;
structural changes in the bleaching and wetting of wheat grains grown in dry and hot climates with cold water, technological parameters of flour milling were identified;
technological recommendations and regulations for the preparation of grain for flour milling have been developed;
Due to the equipment processing, the yield of high-grade flour was increased to 0.5-1.0% and the ash content was reduced to 0.02-0.03%.
Results announced. The scientific novelties of the dissertation are covered in 2 scientific and technical conferences "Promising chemists", 1 scientific and technical conference "Non-traditional directions in the production of food and feed products".
Volume and structure of the dissertation: The dissertation consists of an introduction, three chapters, conclusions and recommendations, a list of 50 references, the volume of 81 pages. In particular, the literature used consists of foreign and Internet sites. The study included 19 tables, 7 figures, and 4 diagrams.
Brief summary of the conclusion:
1. In the grinding of varietal flour, reducing the steaming time by improving the whitening by hydrothermal treatment
2. In the department of preparation of grain for processing, the equipment for bleaching was developed, its optimal mode of operation and technological parameters of grain prepared for bleaching and subsequent wetting were determined.
3. The maximum amount of shell separated in the bleaching equipment was increased to 6.6% and the ash content was reduced to an average of 0.6%. It should be noted that at this level of grain cleaning, the endosperm is partially opened, which negatively affected the result of flour grinding under production conditions, so the separation of the husk by 3-4% and reducing the ash content by an average of 0.3-0.4% limited to.
4. The grain cleaning department has been improved with the help of the proposed bleaching equipment, technological regulations for flour milling have been developed and
5. The yield of wheat flour increased by 0.5-1.0%.
