Purpose of the research: to improve the technological process and equipment for grain bleaching.
Research objectives:
Decrease in ash content by 0.3-0.4% when preparing grains of local wheat for grinding and reducing the time of maturation II by 1.5-2 hours;
Structural changes in the whitening and wetting of wheat grain grown in dry and hot climates, cold water, technological parameters of flour production were revealed;
Shown is an increase in the output of premium flour by 0.5-1.0% and a decrease in ash content by 0.02-0.03% due to technological processing;
Improved process and equipment for bleaching wheat batches.
Local wheat grains, wheat bakery flour and grain bleaching equipment were selected for the study.
Subject of study. Obtaining flour with consistently high properties to improve the bleaching process of grain, increase the quantity and quality of flour when grinding wheat grains.
Research methods. The study used physical and chemical, physical and mechanical, kinematic, experimental planning and mathematical and statistical methods.
Object of research. Local wheat grains, baked wheat flour, grain bleaching equipment were selected.
Subject of research. Production of flour with stable high properties to improve the process of grain whitening, increase the quantity and quality of flour in the grinding of wheat grains by varieties.
Research methods. Physicochemical, physico-mechanical, kinematic, experimental planning and mathematical statistical methods were used in the research.
Scientific novelty of the research:
An effective method for preparing wheat grain for weighing has been developed on the basis of theoretical and experimental research of varieties;
on the basis of a decrease in ash content by 0.3-0.4% and a reduction in threshing time II by 1.5-2 hours when preparing local wheat grains for grinding;
structural changes were revealed during bleaching and wetting of wheat grain grown in dry and hot climates, with cold water, technological parameters of flour-grinding production;
technological recommendations and regulations for the preparation of grain for flour-grinding production have been developed;
thanks to the processing of equipment, the output of high-grade flour was increased to 0.5-1.0%, and the ash content was reduced to 0.02-0.03%.
